Make Your Own Lollipops!

Sure, lollipops are an easy to grab and go at your local dairy or supermarket. But with these homemade ones, you can customize the flavours to suite your preferences or try new concoctions.

Ingredients:

2 cups sugar
2/3 cup light corn syrup
2 teaspoons flavoured extract
Assorted sprinkles or candies
Lollipop sticks

 

Instructions: You will need a candy thermometer for this recipe.

  1. Line two baking sheets with baking paper and set aside.
  2. Fill a large bowl with ice and water and set aside.
  3. Attach a candy thermometer to the side of saucepan
  4. In the saucepan over medium heat, combine the sugar, corn syrup, and ¼ cup water.
  5. Bring mix to boil by increasing the heat to medium high while stirring until all sugar is dissolved.
  6. Use a pastry brush, dip in water and brush the sides of the pan to prevent crystallization.
  7. Continue to boil for 5-7 minutes or until the thermometer reads 150 degrees C or 310 degrees F.
  8. Immediately transfer the saucepan into the bowl of cold water.
  9. Submerge the sides but do not let the water get into the saucepan.
  10. Swirl the pan in the water for 10-15 second and then remove.
  11. Add the flavoured extract and swirl into the mixture.
  12. Work quickly, and pour 2-3 inch in diameter circles onto the baking sheet.
  13. Press the lollipop sticks in as quickly as possible.
  14. Add the sprinkles or candy to the lollipops while still warm and malleable. You may need to lightly press them into the lollipop. Use the back of a spoon for this.
  15. Let cool completely and then enjoy!

 

Notes:

  • Feel free to add food colouring. This should be added at the same time as the flavoured extract.
  • Store in air tight container
